Biography

Hi all! I'm Erin. I'm a native Minnesotan from Apple Valley and also got my undergraduate degree from St. Olaf College in Northfield, MN. Ask me about Minnesotan cuisine if you're curious (I'm an expert on hot dishes and "salads"). Outside of lab I go for long walks, read dystopian novels, explore new foods, and drink mojitos.
